GOUDA BOERENKAAS 2 YEAR
HOLLAND, UNPASTEURISED, TRADITIONAL RENNET
This farmhouse-made special selection cheese only uses milk from small-name dairies, and is matured to give a floral fruitiness to the texture. It is only produced during the summer season, when the cows graze on the open pastures of peat meadows or polders of the Green Hart region between Amsterdam, Rotterdam and Utrecht.
GRUYÈRE D’ALPAGE
Fribourg, Unpasteurised Cow’s Milk, Traditional Rennet
The high mountain cheeses are made between June & September, by small independent cheesemakers using very traditional methods & equipment in their mountain chalets. The flavours are savoury & almost toasty, from the Unpasteurised milk being heated in large copper vats over open wood fires which are located literally next door to the barn where the animals are housed. About 2 cheeses are made from the milk of 50 cows.

More About Swiss Cheese
Switzerland’s high mountains and craggy cliff faces create a temperate climate which lends itself to cheesemaking. Pure, mineral-rich mountain water feeds the soils, and cheeses like Emmental Suisse are produced high up in the hills during the summer months. The privatisation of much communal grazing land has driven away many cheesemakers to other countries, but there are family co-operatives in which the right to use an Alp has been handed down over many generations. All the Alps are 'geyser', meaning that only a certain number of animals are allowed to graze in order to protect the land.
GUBBEEN
County Cork, Pasteurised Cow's Milk, Traditional Rennet
The micro climate of this region produces some fine examples of washed rind cheeses, & this one is no exception. Giana Ferguson’s cheese is made with pasteurised cow’s milk now using vegetable rennet, but still has the supple springy texture, with the wrinkled washed rind quite firm to the touch. The taste is not quite as intense as it used to be but nevertheless has a pleasant savoury herby flavour that is gentle on the palate.

More About Irish Cheese
Renowned for its high-quality dairy, pristine grazing lands and clean air, coupled with a temperate climate, Ireland is a natural destination for artisan cheesemaking. In traditional Irish culture, dairy cattle were seen as a measure of wealth and social standing and were used as a form of currency. From the seventeenth century, oppressive English laws effectively killed the Gaelic farm economy, but the early 20th century saw a revival of farmhouse cheesemaking. Small, hand-made production continues to be a defining feature in the diverse range and exceptional quality of Irish cheeses today.
HAFOD
LAMPETER, UNPASTEURISED, TRADITIONAL RENNET. ORGANIC PRODUCTION
Hafod is an organic farm made cheese using milk from an Ayshire breed grazing on meadow pasture for most of the year. The management of the herd is carefully structured from the seeding of the grasses to include nutrient rich wild plants giving the milk its superb flavour and value-added properties that form the structure of the cheese.
The methods of milking and using natural starters together with the slow process from start to finish gives the golden hued cheese its rich character with a distinct subtle earthy quality and melting end taste. A perfect table cheese to enjoy with a variety of other styles.
HARBOURNE BLUE
TOTNES, PASTEURISED, VEGETARIAN RENNET
Made by Ben Harris on the Ticklemore farm – which produces several other of our cheeses – the milk for this blue comes from a farm at Buckfast, on the edge of Dartmoor. Because the goats are allowed to roam free and half the herd is kidded annually, the variability of flavours is vast – wheel-to-wheel as well as season-to-season. From firm, crumbly and aggressive with a slight grain to mellow and moist with a sweet nutty fruitiness, the strength of this cheese lies in its continual defiance of expectation.
HAUT BARRY
Larzac, Unpasteurised Ewe Milk
The lovely natural rind that has been brushed, allowing the natural moulds – gorgeously coloured from bluish-grey to white to yolk-yellow – to evolve on the rind. The texture is semi-hard with tiny, wide-spaced eyelet holes through the cheese. The taste has a gently earthy sweetness, quite sophisticated, redolent of the milk, with a fresh hazelnut bite. A delicious end of meal cheese.

HERVE VIEUX MOULIN AOP
Herve, Belgium, Unpasteurised Cow’s Milk, Traditional Rennet
The milk for this cheese is sourced only from the appellation area in the province of Liege. We have the piquant version which is left to mature for longer and the rind is washed more often in order to obtain the wonderful powerful taste. A perfect cheese for beer, but also for white wines such as Chardonnay that could cope with the strength and richness of the cheese.

More About Belgian Cheese
Despite its small size Belgium makes more than 300 different varieties of cheese, but most of these are made in very small quantities and are rarely exported out of the country. At La Fromagerie we work with a handful of small producers to provide a growing selection of Belgian cheeses. From Old Groendal to the national treasure Herve, to a lovely creamy Kato, learn about the cheesemaking traditions of this wonderful country.
HUALDO MANCHEGO DOP
TOLEDO, UNPASTEURISED EWE’S MILK, TRADITIONAL RENNET
A classic cheese where we choose 7 month aged versions, some of which we hold back to mature longer. The slow process of making the cheese allows the rind development to bring out the qualities of the milk, giving the cheeses their unique flavour profile, from fruit, sweet, savoury and nutty. It’s a cheese that keeps on giving.
More About Spanish Cheese
Spain produces a diverse range of cheese throughout the country; in the northern and western coastal regions, cows predominate, while the mountainous areas and Canary Islands concentrate on goats and sheep farming. Spain was slower to develop a modern approach to agriculture, but following Civil and World Wars, a more open attitude to farming and cheesemaking became possible after 1975. The biggest rainfalls happen twice a year and the summers are exceedingly hot causing droughts - these extremes are reflected in the styles and flavours of the cheeses in tune with their terrain.
IDIAZABAL
Navarre, Unpasteurised Ewe’s Milk, Traditional Rennet
A lightly smoked cheese made from Latxa breed, indigenous to the mountainous regions around Navarre. Clothbound during the smoking process to give an extra intensity to the flavours and aromas. The pate has a clean, smooth texture with small eyelet holes scattered through the cheese. The fruity spicy flavours have a distinct creaminess and partner well with full-bodied red wines.

ISLE OF MULL CHEDDAR
TOBERMORY, UNPASTEURISED, TRADITIONAL RENNET
The weather plays a big part in the taste of this cheddar. Exposed to the elements of the Atlantic, the salty briny flavours are very evident, as well as the mashed barley used in the whisky-making from the local distillery. The taste is powerful, bordering on fermented, with complex herbal flavours all coming into play.

LAMBDA
Toledo, Spain, Unpasteurised Ewe’s Milk
A completely unique new cheese from this artisan Manchego producer. Semi-soft rind washed giving a full bodied aroma and smooth texture. Expressive taste that is savoury with sweet acidity. Fine white wines as well as semi sweet styles would be good matches.

LANARK BLUE
LANARKSHIRE, UNPASTEURISED, VEGETARIAN RENNET
Humphrey Errington’s powerful blue cheese is not for the faint hearted, but then not many cheeses would be a worthy partner to whisky. The sharp acidity & meaty vegetal flavours are truly Scottish in every way, & this cheese is best eaten right at the end of the meal as its flavours are quite overpowering.
LANGRES
Champagne, Thermised Cow's Milk
Drum-shaped with a depressed, crater-like top (due to not turning the cheese during early affinage) with a soft, luminous, pale orange rind. Washed in Marc du Champagne, the interior pate is rich, moist, and spicy, and should be almost melting below the rind with a flaky centre. Match with a dry Champagne or a velvety smooth Gigondas.

LINDLEY
Worksop, Nottinghamshire, Unpasteurised Cow’s Milk - 150g
Lindley is a soft, cream-enriched cheese made with raw cow’s milk and Jersey cream. Dense, whipped and mousse-like when young. Ripening into a plush firm texture which melts effortlessly on the tongue. Early on, it’s fresh and lactic: crème fraiche, cultured cream and the faint earthiness of button mushroom and steamed rice. As the days pass, the profile deepens: savoury-sweetness of clotted cream and almonds.
LOU BREN
AVEYRON, UNPASTEURISED, TRADITIONAL RENNET
Natural washed burnt sienna/orange rind, with a smooth, somewhat sticky texture. The pate is delicate and fruity-tasting, with aromatic earthy aromas and a sharp burnt caramel aftertaste. The cheese is produced in very small quantities by artisan cheesemakers, using very traditional methods, varying markedly given the season – hence the rather rustic appearance of the cheese and the range of flavour throughout the year. Limited availability.
