Lucien Boillot makes a fantastic example. The nose is incredible, almost amaretto or frangipane like a plum frangipane tart, deep savoury yet fresh and light. Great fine red wine for a Christmas turkey or capon. One of the few reds we’d recommend for cheeses that don’t work well with tannins. Guillaume ploughs his vineyards a mix of horse, tractor, trident plough and winch. The vines are pruned to limit yields.
